This is very simple and easy recipe for bharli vangi. It is also one of my favorite dish from childhood. My mother makes it especially for me. Post marriage whenever i go to visit her she makes it to make me happy on day one itself. Bharli vangi and batatyacha rassa are two my favorite recipe in veg. I’m big fan of her non veg recipe as well.
She sent me kanda lasun chatni along with one Paithani in last month. This is first recipe which I made with new chatni and obviously it became delicious…. Thanks aai.
This recipe is quick and easy as well as spicy. It is typical Maharashtrian recipe. I am Satarkar, so one can say that this recipe from Satara or west Maharashtra.

Ingredients
- • 10 baby brinjals / eggplants.
- • 1 cup of peanut powder.
- • ½ cup of chopped onion.
- • 2 tbsp kanda lasun chatni (substitute 1 tbsp red chili powder + 1/2 tbsp coriander powder + 1/2 tbsp cumin powder + 1/2 tbsp garam masala).
- • Oil.
- • Salt to taste.
Instructions
- First wash all brinjals and make cress cross slits on the narrow side of brinjals.
Stuffing Preparation
- Take 1 cup of peanut powder in plate. Add 1/2 cup of chopped onion.
- Add 2tbsp of kanda lasun chatni. If chatani is not available then add 1 tbsp red chili powder + 1/2 tbsp coriander powder + 1/2 tbsp cumin powder + 1/2 tbsp garam masala.
- Add salt to taste
- Add 3 tbsp of oil and mix all things together. Stuffing is ready.
Cook Brinjals
- Now fill the brinjals with prepared stuffing and simultaneously keep brinjals in kadai.
- Pour remaining stuffing in kadai.
- Now add 1 cup of water and turn on heat. Cover and cook on low heat for 20 minutes.
- Bharli vangi or stuffed brinjals are ready.

Ingredients we need for this recipe small brinjals, peanut powder, chopped onion, kanda lasun chatni and salt to taste.
Choosing brinjals is a skill too. It should be small, few inches long, round shaped like an egg. Also tryto search one with smooth, purple skin streaked with white and a green calyx brinjals.
If those are not available then you can also make this recipe with dark purple brinjal. But I prefer test of brinjals which I mentioned above.

Pour remaining stuffing in kadai.
Now add 1 cup of water and turn on heat. Cover and cook on low heat for 20 minutes.
Post that you can see that stuffed brinjal is ready. We also call them bharli vangi in Marathi.
Garnish with coriander.
Serve hot with jowar bhakari / chapati or rice. I prefer to eat with Jowar Bhakri
